Want a yummy snack perfect for any time of day; these omelette bites are quick, easy and healthy! Our E-tutor Claire loves these for her and her little one!
Prep Time: 10 Minutes
Total Time: 30 Minutes
- 1 cup cooked Quinoa, warmed
- 1/2 cup shredded mozzarella or cheddar
- 2 egg whites
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/3 cup chopped fresh spinach leaves
Step 1. Cook Quinoa (as per packet instructions), it’s as easy as cooking rice!
Step 2. Preheat oven to 180 degrees Celsius and spray a mini muffin tin with cooking spray.
Step 3. In a medium bowl, mix the cooked, warm Quinoa with the cheese to melt the cheese. Add the egg whites, garlic, salt, and spinach leaves. Stir to combine.
SStep 4. Spoon mixture into mini muffin tin filling to the top. Bake at 180 degrees Celsius for 20 minutes. Remove from oven and let cool for 10 minutes. Run a small knife around the edges to loosen and pop out of the muffin tin.
