I did recently try to find puffed quinoa, however I could not and I do not have the patience nor time to puff my own, so I used puffed rice instead and a jar of Mayver’s Super Spread and created my own unique version of the peanut butter cups. [dt_gap height=”10″ /]

The end result looked more like chocolate crackles, so I decided to call my invention “.[dt_gap height=”10″ /]Tika’s Healthy Alternative to Chocolate Crackles”

  •  Puffed rice[dt_gap height=”10″ /]
  • Mayver’s Dark Chocolate Super Spread[dt_gap height=”10″ /]

 

Instructions[dt_gap height=”5″ /]

  1.  Add the amount of puffed rice required to a medium sized mixing bowl.[dt_gap height=”10″ /]
  2. Using a table spoon, scoop Mayver’s Dark Chocolate Super Spread into the bowl of puffed rice and coat the puffed rice.[dt_gap height=”10″ /]
  3. Spoon tablespoons of mixture into patty cake cups. You can use a lined muffin tray or pop them on a plate.[dt_gap height=”10″ /]
  4. Pop the plate/muffin tray into the freezer for 1 hour to set.[dt_gap height=”10″ /]
  5. Once the cups have set, you can transfer them to the refrigerator to store.[dt_gap height=”10″ /]

  • 1½ cups puffed quinoa[dt_gap height=”10″ /]
  • ¼ cup + 2 tablespoons peanut butter[dt_gap height=”10″ /]
  • ¼ cup + 2 tablespoons coconut butter[dt_gap height=”10″ /]
  • 2 tablespoons coconut oil[dt_gap height=”10″ /]
  • 1½ tablespoons pure maple syrup[dt_gap height=”10″ /]
  • 1 teaspoon vanilla extract[dt_gap height=”10″ /]

 

Instructions[dt_gap height=”5″ /]

  1. Add the puffed quinoa to a medium-sized mixing bowl.[dt_gap height=”10″ /]
  2. Add the peanut butter, coconut butter, coconut oil, maple syrup and vanilla extract to a medium sauce pan. Heat over low, and whisk continuously for 4-5 minutes or until completely melted and smooth.[dt_gap height=”10″ /]
  3. Pour the peanut butter mixture over the puffed quinoa and stir to coat.[dt_gap height=”10″ /]
  4. Place 16-18 muffin liners on a baking pan. Drop heaping tablespoons of the quinoa mixture into the muffin liners and gently smooth out with a spoon.[dt_gap height=”10″ /]
  5. Pop the pan into the freezer for 1 hour to set.[dt_gap height=”10″ /]
  6. Once the cups have set, you can transfer them to the refrigerator to store.[dt_gap height=”10″ /]
